A huge “straw bale” building was completed in 1999/2000 and functions as the winery. The insulation qualities of the straw are very good and help keep the wines in barrel and storage cool during the hot dry months of summer. The building is also used for wine tastings and dinners, and the views over the vineyard are nothing short of magnificent.
Grapes are hand picked, crushed and de-stemmed. We rely only on the naturally occurring yeasts in the winery and from the vineyard to create our wild fermentations. The reds are open vat fermented and the cap manually plunged. The whites are fermented either in oak or stainless steel. A basket press is used when ferment is complete and the wine is transferred to a variety of French, and American oak to mature. By careful handling and attention to detail our wines need minimal chemical intervention in their making, a process we have perfected and are proud to stand by.
At harvest (March /April) each year the Wallingtons invite interested clients to join them for vintage activities, accommodation can be had in the Farm Cottage (sleeps 6), or at local Pubs, Motels etc of Canowindra. Picking starts in the early hours under cooler skies, and is completed by midday, when a well deserved lunch (accompanied by various Wallington wines, of course!) is served. After lunch the afternoon work resumes, with crushing of the grapes under the age old philosophy – many hands & “feet” make light work. A refreshing ale or two are very welcome at the end of the day as well as a dip in the pool. Dinner concludes the day, eating as a family and wine tastings straight from the barrel.
